Inspired by Japan House London’s exhibition The Craft of Carpentry: Drawing Life from Japan’s Forests, this specially curated meal set and cocktail give a flavour of Japan’s forests.

Salmon is marinated with Saikyo miso, cooked at a low temperature then grilled over charcoal. The dish is served with a glass of Urakasumi Kioke 12, a sake from Miyagi Prefecture that is fermented in wooden vats. Each complements the other, with woody, oaky flavours.

Nenrin Cocktail – £17

Named after the Japanese word for tree rings, which symbolize both age and wisdom, Nenrin is a warming, smoky, easy-drinking cocktail. It is made with Toki whisky, Drambuie, sweet vermouth, yuzu bitters and a hint of Mezcal.

Step into the serene world of Japanese carpentry at Japan House London’s latest exhibition The Craft of Carpentry Drawing Life from Japan’s Forests, transporting visitors from the living forests that sustain the craft to the celebrated structures it has produced. The exhibition presents the work of Japan’s daiku ‒ master carpenters with world-renowned woodworking techniques. A full-size teahouse reconstruction demonstrates the skills of teahouse and residential specialists, while drawings, animations and replicas display the work of shrine and temple carpenters.
